Ingredients

vegetables
  • 1.5 lb carrots peeled and sliced diagonally 1/2 inch thick
  • 3 apples large, cored and cut into wedges
glaze
  • 3 tbsp maple syrup
  • 2 tbsp Dijon mustard
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 2 clove garlic minced
  • 1 tsp fresh thyme leaves
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp cinnamon
  • 1 fresh thyme for garnish

Equipment

  • 1 sheet pan

Method

Prep and glaze
  1. Preheat oven to 425F and line a large baking sheet with parchment. This creates a hot, nonstick surface for even browning.
  2. Whisk maple syrup, Dijon mustard, olive oil, apple cider vinegar, garlic, fresh thyme leaves, salt, black pepper, and cinnamon until smooth. The glaze should look glossy and well combined.
Roast carrots and apples
  1. Toss carrots in the glaze and spread them in an even layer on the baking sheet. Roast at 425F for 15 minutes, until the edges start to caramelize.
  2. Add apple wedges to the pan and toss gently with the remaining glaze. Roast at 425F for 15 more minutes, until carrots are tender and apples are golden.
Serve
  1. Garnish with fresh thyme and serve immediately. The herbs add fresh color right before serving.

Notes

For the best caramelization, spread carrots in a single layer with space between pieces. Refrigerate leftovers in an airtight container for up to 4 days; reheat on a sheet pan at 425F until warmed through (about 8–12 minutes). Freezing is not recommended because apples soften when thawed. Dietary swap: use a whole-grain Dijon-style mustard that’s gluten-free if needed for a gluten-free version.
