Ingredients
  

Chicken coating
  • 1.5 lb boneless skinless chicken breasts
  • 0.25 cup cornstarch
  • 0.5 cup all-purpose flour
  • salt to taste
  • pepper to taste
  • garlic powder to taste
Firecracker sauce
  • 0.25 cup hot sauce (Frank's RedHot)
  • 0.25 cup brown sugar
  • 3 tbsp butter
  • 2 tbsp apple cider vinegar
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 0.5 tsp red pepper flakes start with 1/2 tsp; use 1 tsp for hotter
  • sesame seeds for garnish
  • green onions sliced, for garnish
Cooking oil and serving
  • vegetable oil for frying
  • steamed rice for serving

Method
 

Coat the chicken
  1. Toss the chicken with cornstarch, flour, salt, pepper, and garlic powder until every piece is coated; the surface should look lightly dusty before frying.
Fry until crisp
  1. Heat vegetable oil in a cast iron skillet to 375°F and fry the chicken in a 1/2 inch oil layer for 3-4 minutes per side, until golden and cooked through; drain on a rack or paper.
Make the firecracker sauce
  1. In a saucepan over medium heat, combine hot sauce, brown sugar, butter, apple cider vinegar, soy sauce, garlic powder, and red pepper flakes, stirring until the butter melts and the sauce turns smooth and glossy, about 2-3 minutes.
Caramelize and coat
  1. Toss the crispy chicken in the firecracker sauce until every piece is fully coated, then return it to the pan for 1-2 minutes so the coating caramelizes and looks glossier.
Serve
  1. Serve the firecracker chicken over steamed rice and top with sesame seeds and sliced green onions so the red-orange sauce clings visibly to the bites.

Notes

For best crispness, fry in batches so the oil stays close to 375°F and the chicken doesn’t steam. Refrigerate leftovers in a sealed container up to 3 days; reheat in a hot skillet to re-crisp. Freezing is not recommended because the coating softens. Dietary swap: use gluten-free all-purpose flour for the coating if needed.
