  • 1 cup shredded mozzarella cheese Stir in off heat so it melts into the mixture.

Finishing

Method
 

Make the mushroom cheese filling
  1. Melt the butter in an oven-safe skillet over medium-high heat, add the diced cremini mushrooms, and cook 5-6 minutes until all moisture has evaporated, stirring occasionally as they brown.
  2. Add the minced garlic and fresh thyme leaves and cook 1 minute, just until fragrant, then turn off the heat and cool slightly.
  3. Stir in the shredded mozzarella cheese and the grated Parmesan cheese until the mixture turns cohesive and stretchy.
Prep and fill the chicken
  1. Cut a deep pocket in each chicken breast, then season inside and out generously with salt, pepper, garlic powder, and smoked paprika.
  2. Spoon the mushroom cheese mixture into each pocket and secure the openings with toothpicks so the filling stays contained.
Sear and bake
  1. Heat the olive oil in the oven-safe skillet over medium-high heat and sear the stuffed chicken breasts 3-4 minutes per side until golden.
  2. Bake at 400°F for 18-22 minutes until the internal temperature reaches 165°F.
Finish
  1. Remove the toothpicks, drizzle with extra garlic butter, and rest 5 minutes before slicing so the filling stays molten and the juices settle.

Notes

For cleaner slicing, use kitchen towel paper to blot the chicken surfaces before seasoning so browning is more even. Refrigerate leftovers in a sealed container for up to 3 days; reheat gently at 300°F until warmed through. Freezing is not recommended because the filled texture can become watery. For a dairy-light swap, use low-moisture part-skim mozzarella and a reduced-fat Parmesan (expect a slightly less stretchy filling).
