Ingredients
Method
Make the cinnamon sugar rim
- Mix sugar and ground cinnamon on a small plate to make the cinnamon sugar mixture, keeping it dry and evenly combined.
Rim the glasses
- Wet the rims of the flutes with chilled apple cider, then dip each rim into the cinnamon sugar mixture and set the flutes aside.
Assemble the mimosas
- Fill each flute one third full with chilled apple cider.
- Top each flute with chilled champagne or prosecco.
- Garnish each drink with a thin apple slice and a cinnamon stick, then serve immediately.
Notes
For the cleanest rim, chill both the apple cider and the flutes briefly before dipping, and avoid overfilling so the bubbles stay lively. Store any leftover unassembled cider in the fridge up to 3 days; mix with champagne/prosecco only at serving time—do not freeze. For a lighter option, use sparkling apple cider with no added sugar and keep the cinnamon-sugar rim to a thin coating.
