  • 0.5 gallon vanilla ice cream Softened enough to spread thickly.

  • 2 cup whipped cream For piping on top.
  • 1 fresh berries For topping after assembling.

Method
 

Assemble the waffle-ice-cream cake
  1. Place a waffle on the bottom of a springform pan and brush it with maple syrup, so the surface is evenly coated.
  2. Spread a thick layer of softened vanilla ice cream over the waffle, leaving a smooth, level top.
  3. Add another waffle layer on top and brush with maple syrup to lightly moisten the waffle edges.
  4. Repeat by spreading a thick layer of softened vanilla ice cream over the new waffle layer.
  5. Continue layering waffles and ice cream until the pan is full, ending with a waffle layer on top.
  6. Freeze for 6 hours until completely firm, so the layers hold together for slicing.
Finish and chill again
  1. Pipe whipped cream over the top of the frozen cake, creating a neat, even layer.
  2. Drizzle caramel sauce over the whipped cream in a light, decorative pattern, letting it run slightly for a streaked look.
  3. Top with fresh berries and finish with a maple drizzle for added flavor and color.
  4. Freeze for 1 more hour before releasing from the springform pan and serving, so it slices cleanly.

Notes

For clean slices, keep the cake frozen until the last minute and use a sharp knife warmed with hot water (wipe between cuts). Store covered in the freezer for up to 2 weeks; it can be frozen for longer, but texture may soften. No-bake heads-up: there’s freezing time, but no hot oven baking here. If you want a lighter option, use reduced-fat vanilla ice cream and swap regular whipped cream for stabilized whipped topping.
