Pretzel crust
  • 3 cup mini pretzels
  • 0.75 cup unsalted butter melted
  • 3 tbsp sugar
Cream cheese layer
  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 2 cup whipped topping
Frozen strawberry layers
  • 0.5 gallon strawberry ice cream softened
  • 2 cup fresh strawberries sliced

Method
 

Make and bake the pretzel crust
  1. Preheat the oven to 350°F. Combine the crushed mini pretzels, melted unsalted butter, and sugar, then mix until evenly coated.
  2. Press the pretzel mixture firmly into a 9x13 pan. Bake at 350°F for 8-10 minutes until set and golden.
  3. Remove the pan from the oven and cool the crust completely. Let it cool until no longer warm to the touch before adding the next layer.
Build the cream cheese layer
  1. Beat the cream cheese and powdered sugar until smooth. Continue mixing until there are no visible lumps.
  2. Fold in the whipped topping and spread the mixture over the cooled pretzel crust. Smooth the surface to an even layer.
  3. Freeze the cake for 30 minutes to firm up the cream cheese layer. Keep it level in the freezer.
Layer strawberries and freeze
  1. Layer the sliced fresh strawberries over the cream cheese layer. Arrange them in an even layer so coverage is consistent.
  2. Spread the softened strawberry ice cream over the strawberries in a smooth, even layer. Work quickly so the ice cream doesn’t melt or tear the strawberry layer.
  3. Freeze for at least 6 hours. Top with fresh strawberries before serving.

Notes

For the cleanest slices, cool the pretzel crust completely before adding the cream cheese layer, and freeze until fully firm (at least 6 hours). Store covered in the freezer up to 2 months; thaw in the fridge about 10-15 minutes for easier slicing. Freezer yes—best quality frozen. Dietary swap: use a dairy-free cream cheese and dairy-free whipped topping for a dairy-free version (texture will be slightly softer).
