Ingredients

Fresh Cranberry Orange Sauce
  • 12 oz fresh cranberries
  • 0.75 cup sugar
  • 1 cup fresh orange juice
  • 1 tbsp orange zest
  • 1 orange, peeled and segmented
  • 1 pinch salt

Equipment

  • 1 cast iron skillet

Method

Cook the cranberry base
  1. Bring the sugar and fresh orange juice to a boil in a saucepan over medium-high heat, then keep it at a steady boil for 1 minute (you should see bubbles actively breaking the surface).
  2. Add the fresh cranberries and salt, then simmer for 10 minutes until most berries burst and the mixture looks slightly thickened (watch for bursting skins and a ruby-red color).
Finish and chill
  1. Remove from heat and stir in the orange zest until it disperses throughout the sauce with visible flecks (about 30 seconds to 1 minute).
  2. Cool slightly, then gently fold in the orange, peeled and segmented so the segments stay intact (stop when no dry orange pockets remain).
  3. Chill until serving so the sauce thickens as it cools and the flavors meld (cover and refrigerate).

Notes

Pro tip: If you want a chunkier texture, simmer on the lower end of the 10-minute range so fewer berries burst; for smoother sauce, simmer closer to the full 10 minutes. Store covered in the refrigerator up to 5 days; freeze is not recommended because the orange segments can break down after thawing. For a dairy-free holiday side, this recipe already fits—if you want a lower-sugar option, use a 1:1 sugar substitute designed for cooking and simmering.
