Sauté the aromatics
- Heat 2 tbsp olive oil in a large pot over medium heat, then sauté the diced onion for 5 minutes until softened. You should see the onion turning translucent around the edges.
- Add the minced garlic and grated ginger, then cook for 2 minutes, stirring frequently to prevent browning. The mixture should smell fragrant and lightly sizzling.

Simmer until tender
- Pour in the broth and add the cubed sweet potatoes, then bring the pot to a simmer. You should see steady bubbling around the sweet potato cubes.
- Simmer for 25-30 minutes, stirring occasionally, until the sweet potatoes are very tender. A fork should slide in easily with no resistance.
Blend and finish
- Blend the soup completely smooth with an immersion blender. Pause and move the blender around until no chunks remain.
- Stir in the coconut milk, maple syrup, and orange juice, then return to a gentle simmer. Look for small bubbles breaking the surface, not a hard boil.
- Season generously with salt and pepper. Taste and adjust until the flavor pops and the sweetness balances the heat.
Serve
- Ladle the soup into bowls and top with toasted pepitas and a swirl of cream. Finish with the pepitas visible on top and the cream forming a light ribbon.

For the silkiest texture, blend while the soup is hot and keep the immersion blender moving to avoid air pockets. Store in the refrigerator up to 4 days; reheat gently on the stove over medium-low, adding a splash of broth or water if it thickens. Freezing is yes—freeze in portions up to 3 months and thaw in the fridge before reheating. For a dairy-free option, serve with extra toasted pepitas only (skip the cream swirl) or use coconut cream instead.
