Method
Prep and preheat
- Preheat oven to 400°F.
- Cut a deep pocket into the side of each chicken breast, then season the outside with salt, black pepper, garlic powder, and dried thyme.
Stuff and sear
- Stuff each pocket with baby spinach, sliced brie, and 1 tablespoon whole berry cranberry sauce, then secure with toothpicks.
- Heat olive oil in a hot oven-safe skillet over high heat and sear the chicken 3-4 minutes per side until golden.
Bake and finish the pan sauce
- Transfer the skillet to the oven and bake 15-18 minutes until the chicken reaches 165°F.
- Remove chicken from the skillet, then add chicken broth, remaining whole berry cranberry sauce, honey, balsamic vinegar, and fresh rosemary, and simmer 3 minutes.
- Spoon the sauce over the chicken and serve.
Notes
For the cleanest melt, slice the brie evenly and avoid overstuffing the pockets so they close; toothpicks help keep the filling inside. Refrigerate leftovers in a sealed container for up to 3 days. Freezing: no (the spinach and brie texture can soften). Dietary swap: use low-fat brie if you want a lighter option while keeping the stuffed presentation.
