Blend the base
- Add full-fat cottage cheese, frozen pineapple chunks, honey or agave, lemon juice, vanilla extract, and salt to a high-powered blender. Blend until completely smooth, using a few stop-and-scrape moments to pull everything into the blades.
- Blend for at least 2 minutes until the texture is silky with no cottage cheese lumps. Stop when the mixture looks fully uniform and thick like soft serve.
- Taste the mixture and adjust sweetness as needed by adding more honey or agave. Blend again briefly until the adjustment disappears.
Pipe and serve
- Transfer the blended mixture to a piping bag fitted with a star tip. Pipe into cups in a classic Dole Whip swirl shape.
- Serve immediately so the soft-serve texture stays airy and thick. Look for a bright yellow-cream color with visible swirls on top.
Notes
For the smoothest result, make sure the frozen pineapple chunks are relatively small and blend in short cycles with a scrape-down if needed. Keep leftovers covered in the freezer up to 1 day; let it sit at room temperature for 2–3 minutes, then re-blend or stir before serving again. No freezer-burn prevention needed for short storage. Dietary swap: use maple syrup instead of honey/agave for a different flavor while keeping it dairy-rich and high-protein.
