Make the crust
- Combine crushed graham crackers, 1/2 cup brown sugar, and melted butter, then press firmly into a 9-inch springform pan. Freeze for 15 minutes to set the base.
Make espresso brown sugar syrup
- Simmer 1/2 cup brown sugar with 1/2 cup water until the mixture turns glossy and syrupy, then remove from heat. Stir in espresso powder dissolved in hot water and let cool slightly.
Flavor and layer the ice cream
- Stir the espresso into the brown sugar simple syrup, then fold half of the syrup into softened coffee ice cream. Mix until the ice cream looks evenly coffee-brown.
- Spread the ice cream over the frozen crust in an even layer, then smooth the top. Freeze for 4 hours.
Finish and freeze
- Drizzle the remaining espresso brown sugar syrup over the frozen cake surface in an even layer. Let the drizzle sink slightly into the top.
- Top with whipped cream and dust with cinnamon and brown sugar for topping. Freeze for 2 more hours before serving.
Notes
For clean slices, run a thin knife under hot water and wipe between cuts. Keep covered in the freezer up to 7 days; freezing is yes—wrap tightly to prevent freezer odors. For a lower-sugar option, use a reduced-sugar caramel-style syrup or less brown sugar in the simple syrup while keeping the espresso amount the same.
