Method
Preheat and prep the crust
- Preheat the oven to 375F and fit the unbaked 9-inch pie shell into a 9-inch pie dish, then crimp the edges.
- Place the pie dish on a sheet pan for easier handling while baking.
Make the apple filling
- Toss the sliced apples with granulated sugar, cinnamon, nutmeg, cornstarch, and lemon juice until evenly coated, then pile them into the unbaked shell mounding slightly.
Make the oat crumble topping
- Combine rolled oats, all-purpose flour, brown sugar, cinnamon, and salt, then cut in the cold cubed butter until chunky clumps form.
Assemble and bake
- Scatter the crumble topping over the apple filling, covering generously.
- Bake for 55-65 minutes until the crumble is deeply golden and the filling bubbles through.
- Tent with foil after 35 minutes if the topping browns too quickly.
Cool and slice
- Cool the pie at least 1 hour before slicing so the filling firms up.
Notes
For clean slices, cool the pie at least 1 hour; if you want it firmer, chill up to 24 hours and slice cold. Store covered in the refrigerator for 3-4 days; freeze leftovers up to 2 months. For a lighter option, use a 1:1 sugar substitute in the apple filling and crumble (results may vary slightly in browning).
