Ingredients

Shortbread base (doubles as crumble)
  • 2 cup all-purpose flour Measure by spooning into the cup and leveling.
  • 1 cup rolled oats Use rolled oats for best crumble texture.
  • 1 cup brown sugar, packed Pack firmly for a tender, caramel-like base.
  • 1 tsp cinnamon Ground cinnamon for warmth in both base and filling.
  • 0.5 tsp salt Fine salt helps balance sweetness.
  • 1 cup cold unsalted butter, cubed Keep cold so the mixture stays crumbly.
Apple filling
  • 4 large apples, peeled and thinly sliced Slice thinly for even bubbling throughout.
  • 0.333 cup granulated sugar Sweetens and draws out juices.
  • 1.5 tsp cinnamon Add to apple mixture for classic spice.
  • 0.25 tsp nutmeg Optional but recommended for aromatic depth.
  • 2 tbsp cornstarch Thickens apple juices so bars slice cleanly.
  • 1 tbsp lemon juice Brightens flavor and helps prevent browning.
Caramel sauce for serving
  • 1 Caramel sauce Drizzle to serve; adjust amount to taste.

Equipment

  • 1 sheet pan

Method

Prep and bake the base
  1. Preheat oven to 375F and line a 9x13 pan with parchment paper for easy lifting.
  2. Mix all-purpose flour, rolled oats, brown sugar, cinnamon, and salt, then cut in cold cubed butter until the mixture looks like damp crumbs.
  3. Reserve 1 cup of the crumb mixture for the topping.
  4. Press the remaining mixture firmly into the prepared pan to form an even base.
  5. Bake at 375F for 12 minutes, until the base is lightly set.
Add apples and crumble topping
  1. Toss thinly sliced apples with granulated sugar, cinnamon, nutmeg, cornstarch, and lemon juice until evenly coated.
  2. Layer the seasoned apples over the hot baked base in an even layer.
  3. Scatter the reserved crumble over the apples so the topping covers most of the surface.
Bake, cool, and serve
  1. Bake at 375F for 30 to 35 minutes, until the crumble is golden and the apples are visibly bubbling.
  2. Cool completely before slicing, so the juices thicken and the bars hold their shape.
  3. Drizzle with caramel sauce to serve.

Notes

Pro tip: slice apples thinly and spread them evenly for consistent bubbling and set; if your apples are very juicy, make sure the full 30–35 minutes is reached. Store covered in the refrigerator up to 4 days; freeze baked bars up to 2 months (wrap tightly) and thaw overnight in the fridge. For a lighter swap, use half brown sugar and half granulated sugar in the base and reduce caramel drizzle amount to taste.
