Prep and bake the base
- Preheat oven to 375F and line a 9x13 pan with parchment paper for easy lifting.
- Mix all-purpose flour, rolled oats, brown sugar, cinnamon, and salt, then cut in cold cubed butter until the mixture looks like damp crumbs.
- Reserve 1 cup of the crumb mixture for the topping.
- Press the remaining mixture firmly into the prepared pan to form an even base.
- Bake at 375F for 12 minutes, until the base is lightly set.
Add apples and crumble topping
- Toss thinly sliced apples with granulated sugar, cinnamon, nutmeg, cornstarch, and lemon juice until evenly coated.
- Layer the seasoned apples over the hot baked base in an even layer.
- Scatter the reserved crumble over the apples so the topping covers most of the surface.
Bake, cool, and serve
- Bake at 375F for 30 to 35 minutes, until the crumble is golden and the apples are visibly bubbling.
- Cool completely before slicing, so the juices thicken and the bars hold their shape.
- Drizzle with caramel sauce to serve.
Notes
Pro tip: slice apples thinly and spread them evenly for consistent bubbling and set; if your apples are very juicy, make sure the full 30–35 minutes is reached. Store covered in the refrigerator up to 4 days; freeze baked bars up to 2 months (wrap tightly) and thaw overnight in the fridge. For a lighter swap, use half brown sugar and half granulated sugar in the base and reduce caramel drizzle amount to taste.
