Ingredients

Dry ingredients
  • 1.5 cup gluten-free all-purpose flour blend
  • 0.25 cup granulated sugar
  • 2 tsp baking powder
  • 1.5 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.25 tsp salt
Wet ingredients
  • 2 eggs
  • 0.5 cup oat milk or almond milk
  • 1 tbsp melted coconut oil
  • 1 tsp vanilla extract
Apple filling
  • 2 cups apples, peeled and finely diced
For cooking
  • 1 Cooking spray
For glaze
  • 1 cup powdered sugar
  • 2 tbsp oat milk
  • 0.25 tsp vanilla

Equipment

  • 1 air fryer

Method

Mix the batter
  1. Whisk gluten-free flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt in a bowl until evenly combined; the mixture should look uniformly speckled with spices.
  2. In a separate bowl whisk eggs, oat milk or almond milk, melted coconut oil, and vanilla extract until smooth and glossy.
  3. Add the wet mixture to the dry ingredients and fold until just combined with no dry pockets; stop when the batter comes together.
  4. Fold in diced apples, then let the batter rest for 5 minutes so the flour hydrates and thickens slightly; it should look thicker and clingier.
Air-fry
  1. Preheat the air fryer to 370F and line the basket with parchment, then spray with cooking spray for easy release.
  2. Scoop 3-tablespoon portions into the air fryer, flatten slightly, and spray the tops lightly with cooking spray.
  3. Air fry for 10-12 minutes total, flipping at 6 minutes, until golden on both sides with crisp edges and set centers.
Glaze and serve
  1. Whisk powdered sugar, oat milk, and vanilla until smooth and pourable; it should ribbon off a spoon.
  2. Drizzle the glaze over warm fritters so it melts slightly and clings to the crispy surface.

Notes

For the best texture, make sure diced apples are very finely chopped so they cook through before the fritters over-brown. Store leftovers in the refrigerator up to 3 days, reheating in the air fryer at 320F for 2-4 minutes to re-crisp. Freezing is not recommended for best apple and glaze texture. If you want a dairy-free option, use oat milk in both the batter and glaze and confirm your coconut oil is dairy-free (it is by default).
