  • 2 cup bok choy Halve lengthwise.
  • 1 cup corn kernels Top bowls after ladling broth.

  • 1 chili oil Drizzle to taste.
Broth
  • 4 cup chicken broth Bring to a simmer before whisking in seasonings.
  • 2 tbsp white miso paste Whisk in at a simmer for smooth broth.
  • 2 tbsp soy sauce Add with miso, mirin, and sesame oil.
  • 1 tbsp sesame oil Adds aroma; whisk into broth.
  • 1 tbsp mirin Sweet-savory balance in the broth.
  • 1 Salt Add to taste if needed.

Equipment

  • 1 Dutch oven

Method

Soft-boil the eggs
  1. Bring a pot of water to a boil, then cook the eggs for 7 minutes until set but still tender at the center. Transfer to cold water, peel, and halve.
Make the soy-miso broth
  1. In a Dutch oven, bring the chicken broth to a simmer and whisk in the white miso paste, soy sauce, mirin, and sesame oil until smooth. Keep the broth at a gentle simmer.
Cook dumplings
  1. Add the frozen dumplings to the simmering broth and cook for 5-7 minutes until cooked through. Keep the heat at a steady simmer.
Wilt bok choy
  1. Add the halved bok choy and simmer for 2-3 minutes until wilted. The greens should turn bright and tender.
Cook ramen noodles
  1. Cook the fresh ramen noodles separately according to package instructions, then drain. Keep them hot so they don’t clump.
Assemble the bowls
  1. Divide the noodles between 4 bowls and ladle the broth and dumplings over the top. Make sure each bowl has dumplings and bok choy.
  2. Top each bowl with halved soft-boiled eggs, corn, sliced green onions, nori, sesame seeds, and chili oil. Finish with a small pinch of salt to taste if needed.

Notes

For the smoothest broth, whisk miso into simmering (not boiling) liquid so it doesn’t taste grainy. Store leftovers covered in the fridge up to 3 days, but keep noodles separate if possible and reheat broth and dumplings gently. Freezing is not recommended for assembled bowls; freeze dumplings and broth separately if you want. Dietary swap: use chicken-free/vegetarian dumplings and replace chicken broth with vegetable broth for a vegetarian-friendly version.
