Equipment

  • 1 Dutch oven

Method

Brown sausage
  1. Heat a Dutch oven over medium-high heat and brown the sausage slices until cooked through and browned, then remove and set aside.
  2. Leave the rendered sausage fat in the pot for flavor.
Build the soup base
  1. Sauté the diced onion in the sausage fat for 4 minutes until softened.
  2. Add the minced garlic and Italian seasoning and cook for 1 minute, stirring to prevent burning.
  3. Pour in the chicken broth and add the cauliflower florets, then bring to a simmer.
  4. Simmer for 15-18 minutes, until the cauliflower is very tender.
Blend and add cream
  1. Blend about half the soup smooth until creamy, then stir it back together.
  2. Stir in the heavy cream until fully combined.
Wilt kale and finish
  1. Add the chopped kale and sausage back to the pot along with the red pepper flakes and grated parmesan.
  2. Cook for 5 minutes, until the kale wilts and the soup thickens slightly.
  3. Season with salt and pepper to taste, then serve hot.

Notes

For the smoothest texture, blend carefully in batches if your pot is full, and keep the soup at a gentle simmer while stirring in cream so it stays silky. Store covered in the refrigerator up to 3 days; reheat gently on the stove (add a splash of broth if thick). Freezing: yes, but cream soups can thicken—thaw and reheat with a little extra broth. For a dairy-light option, use half-and-half instead of heavy cream and consider reducing the parmesan slightly.
