Ingredients

Chicken
  • 1.5 lb chicken breast Dice into bite-size pieces so they cook through in the simmer.
Vegetables & aromatics
  • 1 cauliflower Cut into florets; aim for similar sizes so they become very tender evenly.
  • 1 onion Dice finely for quick sautéing.
  • 4 garlic Minced for even distribution.
Soup base
  • 4 cup chicken broth Use regular or low-sodium; adjust salt at the end.
  • 3 tbsp unsalted butter For sautéing the onion and building flavor.
  • 1 cup heavy cream Stir in at a gentle simmer to keep the soup smooth.
Seasonings
  • 1 cup shredded cheddar Melt in at the end for a creamy, lightly thickened finish.
  • 1 tsp garlic powder Adds savory depth without extra prep.
  • 1 tsp smoked paprika Provides warm, smoky flavor.
  • 0.25 salt and pepper To taste; season after the cheese melts.
Serving
  • 0.25 chives Chop and sprinkle on top for color and freshness.
  • 0.25 cup extra cheddar Extra cheese for serving, if desired.

Equipment

  • 1 Dutch oven
  • 1 immersion blender

Method

Sauté and simmer
  1. Melt the butter in a large pot, then sauté the onion for 4 minutes until softened.
  2. Add the garlic and cook for 1 minute, stirring until fragrant.
  3. Add the diced chicken and cook for 4-5 minutes until it changes color.
  4. Add the chicken broth, cauliflower florets, garlic powder, and smoked paprika, then bring the pot to a boil.
  5. Reduce to a simmer and cook for 15-18 minutes until the cauliflower is very tender.
Blend, finish, and season
  1. Use an immersion blender to blend about half the soup, leaving some cauliflower chunks for texture.
  2. Stir in the heavy cream, then return to a gentle simmer (avoid a hard boil).
  3. Stir in the shredded cheddar until melted, then season with salt and pepper to taste.
Serve
  1. Ladle the soup into bowls and top with extra cheddar and chives before serving.

Notes

Pro tip: blend only about half so the soup stays creamy but still spoonable with visible cauliflower. Store in the refrigerator up to 4 days; freeze up to 2 months (expect a slightly softer texture when reheated). For a lighter option, use half-and-half instead of heavy cream and reduce the cheddar slightly.
