Cook and cool the apple filling
- Cook the diced apples with butter, brown sugar, cinnamon, nutmeg, allspice, and cornstarch over medium heat for 5-7 minutes until softened and thickened, stirring often so the mixture turns glossy.
- Cool the apple filling completely so it thickens further and won’t steam the wrappers when rolling.
Fill, fold, and fry
- Place 2-3 tablespoons of apple filling in the center of each egg roll wrapper.
- Fold the sides over and roll tightly to form an egg roll, then seal the seam with beaten egg.
- Heat vegetable oil to 350F in a Dutch oven.
- Fry the egg rolls for 2-3 minutes per side until deeply golden, turning once so both sides brown evenly.
Coat and serve
- Drain the fried egg rolls on paper towels, then while they’re still hot immediately roll them in cinnamon sugar so the coating sticks.
- Serve the apple pie egg rolls with caramel sauce for dipping.
Notes
Pro tip: cool the apple filling completely (room temp or chilled) before filling the wrappers to prevent soggy egg rolls. Store leftovers in the refrigerator up to 3 days; reheat in a 375F oven or air fryer to re-crisp. Freezing is not recommended because the fried wrapper texture softens after thawing. Dietary swap: use gluten-free egg roll wrappers if you need a gluten-free version.
